A new partnership takes shape in Tagaytay. Margarita Signature Caterer and Areté Tagaytay have agreed to establish Margarita Forés’ bespoke catering service as the exclusive caterer of Tagaytay’s newest soon-to-open luxury hotel and resort.

About Margarita Signature Caterer
In 1986, Margarita packed her bags and flew to Italy for a crash course in Italian cooking and to learn the language. Within six months, she traveled from Florence, Milan, and Rome, soaking up as much as possible about Italian culture, including its local markets, ingredients, and the home-style cuisine as taught by three signoras. This experience laid the foundation for her culinary education, from which she has now built a successful empire the Philippines.
Upon returning to Manila, Margarita started her work in the hospitality industry, establishing her catering service Cibo di Margarita in 1987. Now known as Margarita Signature Caterer, her catering business has become the benchmark for creating bespoke dining events in the country. Every detail, from the menu to table setting, floral arrangements, and more, is meticulously discussed, planned, and executed. Margarita’s name is synonymous to excellent food. She prepared a grazing table of some Italian cured meats togther with local cheeses and an impressive local Philippine Nduja! Then she prepared a exquisite four course meal to show guests what to expect with the food served in Arete for any function.
Asia’s Best Female Chef of 2016 prepared Organic Chicken Binakol with foie gras, oyster mushroom, Italian porcini nuggets, sili (chili pepper) leaves, coconut strings, coconut water consommé, lemon grass, and ginger perfume; “Gifts from the Philippine Seas” which was made with handmade squid ink pañuelos, Bulacan river prawn, Capiz scallops, Negros blue crab, colatura (Italian aged fish sauce) cream, Pampanga taba ng talangka(crab fat) drizzle; Braised and Grilled Angus Short Rib Adobo made with white balsamic adobo jus, heirloom fried brown rice with dried mango in banana leaf cones, squash flowers and sautéed wing beans; and Pili-crusted hojaldres, smoked Laguna cheese foam, langka (jackfruit) and pink guava, Philippine cinnamon, and vanilla Crème Anglaise.
This was truly an excellent meal as always. Expectations may be high but with Margarita at the helm of the kitchen, these expectations will almost certainly be met.
