Michelin-starred Chef Andrew Walsh brings the tantalizing Asian and Western flavors of his acclaimed Singapore concept Butcher Boy to Manila diners. 

Butcher Boy, the beloved restaurant known for its playful fusion of Asian flavors and Western-style grill, celebrated its soft opening in Manila on December 9, 2024. Located at Infinity Tower Suites in Salcedo, Makati, Butcher Boy Manila promises to bring the same energetic and fun dining experience that has made its Singaporean counterpart a culinary favorite for over eight years.

Founder Chef Andrew Walsh stands as one of the pioneering figures in Singapore who drove the concept of “Bistronomy” — which combines a relaxed, vibrant, and accessible bistro space with an array of exceptional food. As such, Butcher Boy Manila will feature a curated menu of small plates, baos, and signature cocktails, all served in a comfortable and dynamic setting.

A Tribute To The Richness Of Asian Cuisine

“I’ve grown up in the West Coast of Ireland and have had the privilege of working in amazing cities such as Dublin, London, New York, Sydney, and Singapore,” says Andrew. “Since moving to Asia 12 years ago, I’ve been inspired by its rich ingredients and culture. My love for a good steak, along with bao buns and dumplings, form the backbone of Butcher Boy’s menu.”

For Butcher Boy Manila, Andrew draws from his experience in Singapore and his frequent visits to Manila. 

“Some of my favorite dishes will be a tribute to the richness of his Asian journeys, like the Fried Bun and Chili Crab Sauce, Prawn and Chicken Laksa Dumpling, and the Chicken Nasi Lemak Bao. But my time in Manila has also heavily influenced the menu—I’m particularly excited about the Pork Ribs Adobo with Chicharrón Crumbs.”

Andrew has long admired Manila’s evolving dining landscape. “The Manila dining scene is fantastic now, with amazing chefs like Nicco Santos, Josh Boutwood, Jordy Navarra, Bruce Ricketts, and my good friend Chele González,” he shares. 

“I’ve been visiting Manila for many years, as my girlfriend Sherie is from here, and I’m really looking forward to being part of this dynamic community,” the chef adds. “We’re excited to offer something unique to the already incredible scene.”

Chef Andrew Walsh: A Culinary Journey

With a distinguished career spanning across the globe, Walsh made his mark in 2019 by winning a Michelin Star for his concept ​​Cure Singapore. He has worked in renowned kitchens in cities like London, New York, and Singapore, and has been mentored by culinary giants such as Tom Aikens and Jason Atherton.

At Cure, Andrew champions micro-seasonal produce, treating ingredients with utmost respect and employing refined techniques to extract the best flavors. His philosophy of presenting ingredients at their purest continues with Butcher Boy, where the spotlight remains on bold flavors, seamless techniques, and unpretentious dining.
