On July 14, 1798, members of the French revolution were victorious as they stormed Bastille, the medieval fortress used to house political prisoners. This event proved to be a turning point in their history, as the people overthrew the monarchy and established France as a republic. The day was to be known Bastille Day, France’s National Day, celebrating liberté (liberty), égalité (equality), and fraternité (fraternity) amongst its men and women. Since the victory, a military parade would march down the streets of Paris every year to commemorate occasion.

In honor of Bastille Day, luxury hotel the Peninsula Manila is offering guests to dine like a French national at their signature Old Manila restaurant. Chef de Cuisine Allan Briones and his team have prepared a six-course wine-pairing dinner for PHP 5,200 (exclusive of taxes). Get ready for the ultimate “food revolution” in one of Manila’s most endeared fine dining establishments.

Since there has never been an official Bastille Day dinner menu, the Peninsula has taken it upon themselves to celebrate the French National Day the best way they know—through fine gastronomic fare. Begin dinner with Patéen Croute, a homemade pate served with gherkins, pearl onions, and pickled vegetables to be paired with a Pascal Jolivet Sancerre Blanc from the Loire Valley. No French-themed dinner would be complete without a rich Royale de Foie Gras dish. Old Manila’s duck liver dish is finished off with truffle marmalade, green asparagus and wild mushrooms. This is well paired with a Joseph Drouhin “Dourhin Vaudor”, Chablis Premier Cru “Vaillons”.

The true revolution begins with the main course selections. The Mediterranean Sea Bass complements the freshly made potato ravioli with a Chateau Roubine ‘R”, Cote de Provence Rose varietal. Follow it up with a heavier protein course. Chef Allan’s lamb lion has a bone marrow and truffle crust, and is served with fava bean, lemon confit, fondant potato and thyme jus. The pairing of Chateau Lafitte’s Grand Vin de Bordeaux will have one in a culinary ecstasy like no other. Cap dinner off with a Cherry Compote before devouring a Crepe Soufflés, which the hotel describes as over-baked crepes with vanilla custard, orange, and grand mariner ice cream. Don’t forget to book a table for July 14!
