A wine masterclass in collaboration with Txanton highlighted four exquisite vintages from the distinguished labels of Macán and Vega Sicilia.
The Cellar at Grand Hyatt Manila recently hosted its inaugural wine masterclass, “From Clasico to Cuvee,” which celebrated the art of Spanish winemaking through an exceptional selection of wines from the esteemed labels of Macán and Vega Sicilia.
In collaboration with fine wine curator Txanton, the evening offered guests a guided tasting experience led by General Manager of Macán, Ignacio Calvo de Mora, and Regional Manager for Tempos Vega Sicilia, Cesar Roman. Their masterclass featured four vintages from the Macán estate, each emblematic of the depth and character of the visionary partnership between Bodegas Benjamin de Rothschild and Vega Sicilia.
Known for its warm interiors and Mediterranean-inspired menu, The Cellar was transformed into a wine lover’s haven. Guests were greeted by Roger Habermacher, General Manager of Grand Hyatt Manila; the hotel’s F&B Director, Mark Hagan; and Txanton’s General Manager, Besay Gonzalez, their warm welcome and the venue’s atmosphere set the tone for an evening of indulgence and discovery.

A Spanish Feast For Every Sip
No wine tasting is complete without a fixing of cured meat, straight from Spain. To complement the wines, Txanton’s master carver presented a live carving of Jamón Ibérico de Bellota. Meanwhile, The Cellar’s Chef de Cuisine, Diorella Ong, curated a menu of exquisite pintxos and canapés. Highlights included jamón croquettes with tomato chutney; baby gem Caesar salad with Idiazabal cheese and egg yolk confit; and a quartet of savory bites, including goat cheese with fig compote and grass-fed rib-eye with custard yolk.



A hearty main course of chicken and chorizo paella tied everything together, while a decadent burnt Basque cheesecake with raspberry compote provided a sweet finale to the evening.


Featured Wines From The Macán Estate
Guests enjoyed a vertical tasting of four exceptional vintages, each reflecting the evolution and craftsmanship of the estate. Kicking things off was the Macán Clásico 2021, which possessed a youthful and vibrant expression of fresh red fruit and subtle spice. Then came the Macán 2020, a balanced and elegant wine that featured notes of ripe berries, fine tannins, and a polished finish.
Moving onto the older selections, the Macán 2018 was complexly layered, offering aromas of dark fruit, tobacco, and earthy undertones. And last but not least was the Macán 2014: deep garnet in color, it featured aromas of cherry, spice, and herbs, delivering a bold and memorable finish.

The event also highlighted the pioneering alliance between Bodegas Benjamin de Rothschild and Vega Sicilia, whose shared dedication to quality continues to shape the landscape of Spanish winemaking.

With its roster of exceptional wines and food within an intimate atmosphere, “From Clasico to Cuvee” marked a successful debut for The Cellar’s wine masterclass series, providing guests with a rare opportunity to explore the heritage and bold expression of two of Spain’s most revered wine estates.
