A party launches Don Papa Sherry Casks Finish during London Cocktail Week
After successful launches in Rome and Madrid, the team behind Don Papa Rum decided to throw a party during London Cocktail Week to introduce the new Don Papa Sherry Casks Finish to the British press and drinks industry. Invitees were led up a candlelit staircase and into the baroque Court Room at St. Andrew’s Church in London’s Holborn, where a Filipino-Spanish tapas and sherry pairing banquet awaited them.
The guests enjoyed a live setlist by The Brunel Quartet as they mingled and enjoyed the never-ending rounds of hors d’oeuvres and cocktails that went around the room. Present at the launch event were Don Papa Rum founder Stephen Carroll, French mixologist and global brand ambassador for Don Papa Rum Matthias Cadéac d’Arbaud, and a number of influencers from the UK’s fashion, food, and drinks sectors.

Basque Chef Cooks Adobo
Acclaimed Basque chef Joseba Lasa’s menu celebrated the best ingredients from Spain and the Philippines with dishes such as sea bass kinilaw with ajoblanco, adobo pork belly with green mojo picón, and coconut rice pudding with a Pedro Ximenex glaze, caramelized coconut “torrija,” and pineapple cassava bibingka cubes.
People were visibly delighted when Adrian Smith, star of Amazon Prime show “The Three Drinkers” joined them to introduce each course with a commentary to help diners better understand the sherries they were tasting and how these paired with each dish.


Plum, Chocolate and Figs
A new, limited edition premium rum (Abv. 45%) the Sherry Casks Finish has a light amber color and an extremely long finish. It is smooth and fruity on the nose with hints of ripe raisins and a mouth that is full-bodied, yet has a delicate sweetness, with notes of plum, dark chocolate, and ripe figs.
