The AVEC Series Returns with Miko Calo at Makati Shangri-La, inviting some of the best chefs in the Philippines for a series of one-night-only collaborations. Miko has always been about collaborating with the best chefs, artisans, farmers, and producers from the Philippines and beyond. This aspiration focuses on enhancing the dining experience by sharing insights and philosophies that inspire her and her collaborators.
The AVEC (French for “with”) Series reflects this collaborative spirit. These events bring together top culinary talent, creating a space to exchange ideas and strengthen connections. Miko shares: “I’ve been lucky to work with some of the best people in the restaurant industry, and I’m even more grateful to count many of them as friends. Since I’m here doing this residency at the Makati Shangri-La, I thought, why not bring them along for the ride?”

About Miko Calo at the Makati Shangri-La
Miko is the first Filipino chef to have a residency at a luxury hotel in Manila. She and her all-women team have taken over Sage Bar at the Makati Shangri-La. Her newest adventure aligns with her core intentions to showcase childhood flavors and memories. Her cooking remains grounded in French techniques, but she also creates dishes inspired by the food she loved as a child and continues to enjoy. She sees and experiences the world through a distinctly Filipino lens, which shapes her culinary identity.
Every Monday from November 18 to December 9, 2024, Miko invites her friends, some of the best minds in Philippine gastronomy, for these culinary collaborations. Nicco Santos, Quenee Vilar, Aaron Isip, Josh Boutwood, and Margarita Forés are the luminaries who will join Miko in the kitchens of the Sage Bar at the Makati Shangri-La, serving up the very best dining experience with a sizable amount of fun.
