A Filipino Restaurant Reborn

When Sau del Rosario opened Sawsaw by Chef Sau in Poblacion, Makati June of last year, it quickly became a  favorite go-to Filipino restaurant. It served Filipino food that could be described as modern, progressive, quirky, classic, or unique… It was a great place to go for Filipino cuisine. Del Rosario named it after sawsawan, the Tagalog term for sauce and it also sounded like his nickname said twice. The cocktails were great and the food was cooked in an open kitchen.

Tempting Teaser

Fans of Sawsaw were sad to hear that their beloved restaurant closed last May. The partners of the restaurant had parted ways and led to its closure. Last September to October, Sawsaw had a pop-up at Balmori Suites in Rockwell, Makati City. The place was obviously packed as fans of del Rosario’s cooking flocked to savor the dishes they missed and to try the new ones. This was a preview of the new Sawsaw that opened last month.

The pop-up served food that was served in the old Sawsaw. Such appetizers included the hugely popular 24-hour Sous Vide Grilled Pulpo (octopus) Inasal served with home-made vinegar, the Thrice-cooked Sisig with Soy-mansi (soy sauce and calamansi) pearls cleverly served like the Singaporean pie tee, and their Okoy – corn and prawn fritters served with calamansi aioli. Worth trying are the Fried Prawn Spring Rolls (very generously packed with finely chopped prawns) with Tamarind Dip, the Sinuglaw which was a Sanriku Oyster Ceviche topped with grilled pork loin, bone marrow perfectly seasoned in spiced vinegar, and the delectable Sinigang Glazed Broiled Hamachi (Japanese amberjack) with Miso.
