An Ilonggo Ramen For A Limited Time

Nostalgia meets Innovation at Ramen Ron’s Collaboration with Chef Margarita Forés 

Ramen Ron is launching two limited edition dishes crafted by acclaimed chefs Margarita Forés and Hiroyuki Tamura (of that famous but now defunct Ukokkei ramen place on Pasay Road, Makati City).

Margarita is a celebrated chef and earned the title of Asia’s Best Female Chef by Asia’s 50 Best Restaurants in 2016. Her dedication to promoting Filipino culinary heritage on the international stage has earned her numerous accolades. She currently helms Cibo, Lusso, Grace Park, and the soon-to-open Margarita at the Ayala Triangle Garden, Makati City.

Her son, Ramen Ron founder Amado Forés shares “This is their first collaboration and we’re very excited to share these two creations with everyone. We’re only serving 20 sets per day to ensure the quality of the product, since we all know batchoy is a lengthy labor of love.” 

A beloved Ilonggo classic makes it to your neighborhood ramen-ya (ramen shop) for a limited time only

The collaboration came about after chef Margarita, Amado, and Executive Chef of Ramen Ron Tamura shared a meal in a Filipino restaurant where they ate batchoy – a Filipino noodle soup of pork offal, crushed chicharon (pork cracklings), and noodles. They had an epiphany and realized combining the flavors of the Ilonggo classic batchoy and the goodness of ramen would be a hit. 

Amado adds “They realized both dishes had similarities and they worked together to combine my Mom’s love for Batchoy and Talangka Crab Fat and Tamura-san’s expertise in Japanese cuisine.”

Batchoy Ramen

The limited-time-only set consists of the Batchoy Ramen (Ukokkei batchoy-based broth and thin ramen noodles topped with house-made chashu or Japanese braised pork belly, torched bone marrow, pork liver, shio tamago (egg), and crushed chicharon) and the Soft Shell Crab Bun (crispy fried soft shell crab with talangka or river crab fat mayo – one of Margarita’s favorite ingredients – and tangy atchara-inspired Japanese pickles made of carrots, papaya, daikon radish, and onions).

The set is available for dine-in only until June 9th at both Rockwell and BGC branches. With just 20 sets available per day, enthusiasts are encouraged to arrive early, as service will be on a first-come, first-served basis, with no reservations accepted.
