Marco Polo Ortigas Manila Executive Chef Alisdair Bletcher has released a new line of signature dishes at the all-day dining restaurant Cucina. The hotel, which is a Forbes Travel Guide Five-Star Award winner, has always taken pride it in signature restaurants. The ever evolving Cucina often adds to their menu of delicious savory dishes creating a widespread of Continental and Asian options. We look at 3 newly released dishes that you should order this September.

The latest seafood dish is deep fried in a crispy lemon pepper-scented beer batter. Marrying the concepts of Asian cuisine and European street food, the starter plate is as refined as it is flavorful. The selection of tender squid, prawns and fish are served with three sauces: an Romenscu salsa, a saffron garlic aioli, and a basil pesto dipping sauce.

For healthier fare, diners may opt for the lamb brochette. Served in a large skillet, the rustic plating is attractive and reminds eaters of the comforts of home. The dish is topped with roasted garlic, olives and a spiced charred eggplant yogurt to give the eaters the proper balance of sweet and savory flavors.

The breaded baked chicken may look simple, but underneath that beautiful brown-charred meat is an array of explosive flavors longing to be discovered. Chef Alisdair has chosen to maximize the flavorful chicken thigh, embedding it over an orchestra of spinach, walnuts and Roquefort cheese.
