Taupe by Chef Francis Tolentino offers an extraordinary culinary experience with its pop-up at The Balmori Suites in Rockwell, Makati City. This exclusive offering showcases à la carte dishes that combine the finest Filipino ingredients with global flavors, highlighting the chef’s innovative approach to modern cuisine. Each dish is a testament to his mastery of blending local traditions with international techniques, creating an experience that is both familiar and re-imagined.

Building on his success with Taupe in Bonifacio Global City, Francis embarks on creating exciting dishes at The Balmori Suites, bringing modern cuisine to an intimate setting. The Balmori pop-up offers a deeper sense of sophistication.

The menu at The Balmori pop-up features two types of à la carte offerings: the best of the signature debut menu and Balmori exclusive creations. The signature debut menu showcases timeless dishes like the 36-hour Kurobuta and the Uni & Blue Crab starter combination. For guests wanting something unique, the Balmori exclusives present special creations only available at this location, including the Sous Vide Smoked Pork Chop and Scallops and Osciètre Caviar Pasta. 

This holiday season, Taupe by Chef Francis Tolentino was actually given an extended run until January 5, 2025 due to the number of diners that came for the pop-up. They will be offering a special Christmas menu to celebrate the season’s festive spirit. This exclusive holiday offering includes a selection of dishes that capture the warmth and joy of Christmas. One of these dishes will be lobster pasta with pistachio cream. As the year draws to a close, guests can enjoy a unique experience at Balmori, with a spectacular New Year’s Eve countdown celebration, complete with a front-row view of the fireworks display to ring in the New Year in style. The holiday menu will be served starting December 3, 2024.

To make the most of the holiday season, Taupe is hosting weekend events in collaboration with Philippine Wine Exchange, showcasing an exquisite selection of wines and champagnes that perfectly complement the flavors of the menu. Taupe’s new Afternoon Café offers a perfect escape, featuring a special collaboration with Single Origin for an array of coffee creations that highlight classic, Balmori-exclusive brews and coffee cocktails. Kuysen and Paola Lenti have also teamed up to provide the perfect al fresco setting, with beautifully designed furniture that enhances the café experience. This new offering promises a relaxed yet refined space where guests can indulge in exceptional coffee, fine wines, and champagnes.

Set within the luxurious and elegant ambiance of The Balmori Suites, Taupe’s pop-up at The Chef’s Table offers an ideal environment for intimate gatherings, special occasions, or simply an indulgent escape to celebrate the holiday season in style.

Wednesday: 6:00 p.m. – 10:00 p.m. – Nostalgia Tasting Menu (by reservation only)
