Chef Jorge Mendez’s beloved, Michelin Bib Gourmand-recognized restaurant opens its newest branch at Opus Mall with new dishes and an even more refined space.
Two years after opening in the bustling Quezon City food hub of Tomas Morato, Some Thai continues to expand its playful, unapologetically inauthentic take on Thai cuisine with the opening of its third branch at Opus Mall in Bridgetowne Destination Estate, Quezon City. Located on the mall’s first floor, the new space presents a more elevated iteration of the restaurant, which earned a Michelin Bib Gourmand distinction in 2025.
“Our goal was never to chase authenticity for authenticity’s sake. It has always been about respecting and honoring the cuisines that inspire us, while bringing our own perspective and creativity into the experience,” shares Chef Jorge in a statement as he reflects on Some Thai’s beginnings. “That’s where discovery happens. When tradition meets instinct, and familiar flavors become something unexpected and new.”

Inside The New Some Thai At Opus Mall
Designed around the craft of weaving, the interiors layer together sand-textured walls, crab-net inspired lighting, open kitchen movement, and street-like paving into one cohesive landscape that mirrors the richness and daring flavors of the food itself. The branch also features “Möbius Weave” by artist Leeroy New, a large-scale installation made from woven bamboo, rattan, and red acrylic shards.
Against this backdrop, guests at the launch were among the first to try a lineup of Opus branch-exclusive dishes alongside Some Thai staples like the Papaya Salad and Tom Yum.
What’s On The Some Thai Opus Mall Menu?
Guests at the opening began with Tod Mun Goong, a crispy fried shrimp starter topped with ikura and paired with a sharp Thai-spiced vinegar. Served alongside it was a glass of tamarind juice that was bright, sour, and refreshing enough to awaken the palate.
For the mains, the menu favors dishes that taste comforting yet possess a recognizably Thai character. The Bagoong Fried Rice pulls inspiration from the classic khao khluk kapi, reworked with deeper savory notes and topped with crispy pork belly for added flavor and texture. Meanwhile, the Thai Grilled Green Curry Chicken offers a fresher contrast, pairing grilled chicken and vegetables with a green curry sauce layered in herbs and aromatics.
For something heavier, the Thai BBQ Pork Ribs are slow-braised until tender before being glazed in a smoky-sweet Thai barbecue sauce and served with a spiced vinegar dip that balances out the richness.
Dessert closed the evening on a lighter note, the Thai Coconut Crepe Cake layering delicate Thai milk tea crepes with coconut cream and pandan custard, resulting in something fragrant, airy, and satisfying without being heavy or cloying.
Also introduced were Some Thai’s summertime ice cream specials in Coconut Pandan, Thai Milk Tea, and Kaffir Lime, each a homage to familiar Thai flavors.
