A Taste of Heritage

Desserts for the Afternoon Chocolate & Tea Set are inspired by Filipino folklore and cultural symbols. The Maria Makiling, a hazelnut chocolate choux, uses earthy brown and green hues to symbolize the forest goddess and natural beauty. The Ibong Adarna, a pistachio strawberry pie with a financier center and feather-like decorations, captures the legendary bird’s vivid colors. A heart-shaped mango dessert with a crunchy layer represents the mango’s unique shape and the father-son story in Ang Alamat ng Manga.

Other treats draw inspiration from Filipino tales. The rice-grain-shaped Langgam at Tipaklong, a rice caramel cake with white chocolate mousse, symbolizes the balance of nature. The Florante at Laura, a butter toast dark chocolate bread stuffed with cured salmon, calamansi cream, capers, and dill, represents the iconic love story. Inspired by the myth of a pearl necklace transforming into stars, The Necklace & The Comb features Pan de Queso with a tiny star.

The Carabao and the Shell, a savory puff pastry with goat cheese and balsamic caramelized garlic, features two chocolate tuiles symbolizing the story’s main characters. Lastly, the blue and purple tuile of Why the Fish Has Scales represents the fish scales from the folktale, creating a visually striking connection to the story’s core.
