The Art of Brunch: Where To Savor Your Mornings In Manila

By

Once a practical shortcut, brunch has evolved into a ritual of indulgence. These five spots invite you to stay a little longer, eat a lot better, and embrace the beauty of unhurried mornings.

The first time I heard the term “brunch” as a child, it was explained to me as a practical solution: combining breakfast and lunch into one meal to save time and energy for more “meaningful” pursuits, like work, school, or anything deemed productive. It felt like something born out of urgency, a way to compress the day and keep up with its demands. But as I grew older, brunch began taking on a different meaning, moving away from a rushed pace and toward a slower, more tranquil one; that’s why I choose to enjoy brunch in Manila on the days when I can truly take my time.

Gone is the urgency, which has since been replaced with the joy of soft, bouncy pancakes paired with an overflowing glass of mimosa (or a strawberry matcha, if alcohol in the morning feels like too much). Brunch is the perfect start to a day, and everyone deserves to savor it fully. So, we’ve shortlisted five brunch spots we love, each offering its own take on idle mornings and comforting midday plates. Whether you’re in the mood for something light and refreshing or hearty and generous, these spaces invite you to turn an ordinary day into something worth celebrating.

Good Neighbor

Hidden in plain sight along the busy streets of BGC, Good Neighbor is a brunch spot that rewards those willing to seek it out. Intimate yet inviting, it offers the best of both worlds: cozy interiors for slow, peaceful mornings, and an alfresco area where you can bask in the sun and enjoy a rare pocket of calm in the city. Their mocha lattè is a reliable pick, but it’s the food that truly shines. The Smoked Salmon Eggs Benedict is rich without being overwhelming, while a slice of their Burnt Basque Cheesecake makes for the perfect sweet finish thanks to a creamy texture with just the right amount of charred surface.

Panco Cafè

I was recently introduced to a drink called “Kalma,” which you can find at Panco Café, one of my go-to brunch spots. It’s an unexpected mix of matcha and calamansi juice, and while it might sound unconventional, it’s one of those blends you just have to try to fully appreciate.

Founded by siblings Shanel and Daynard Tan, Panco brings together the vibrant flavors of Melbourne with a distinctly Filipino sensibility. The menu is both playful and comforting, with staples like Housemade Tinapa and Charred Longganisa alongside Australian favorites like South Aussie Fried Chicken and Roast Beef. It’s the kind of place where options feel endless, but the atmosphere remains easygoing, making it perfect for easing into a long, unhurried day.

ST. ALi Coffee

Good music, comfortable seating, thoughtfully crafted dishes, and drinks that are as photogenic as they are delicious: ST. ALi Coffee has all the makings of a modern brunch favorite. The space adapts to your mood, just as well-suited for a laid-back catch-up as it is for a solo reset or even an intense study session.

Their Strawberry Cloud—a delicate, layered take on strawberry matcha—is a standout, while the K.F.C. Burger (their spin on a Korean fried chicken sandwich) delivers both flavor and texture.

The Black Bean

For those who favor an understated and refined brunch experience, The Black Bean offers that kind of luxury. The space is sleek yet warm, making it an ideal setting for conversations over well-crafted plates. Its bold, aromatic, and expertly brewed coffee is, unsurprisingly, a highlight.

Founded by Christian Paul Casino—who leads the business with a strong commitment to quality, alongside Omu Toledo-Camus, whose perspective is informed by frequent trips to Australia—The Black Bean reflects a singular blend of discipline and global sensibility in both its menu and execution. For something a little different, their Hojicha Latte is a standout with its roasted yet smooth taste that offers an alternative to the usual coffee order.

Goods From Scratch

As its name suggests, Goods From Scratch is rooted in effort, building a foundation from the ground up. Everything feels deliberate here, from the ingredients they source to the way each dish is prepared. It’s a space that champions slow food in the best way, brunch becoming a form of true nourishment.

We highly recommend exploring their wide selection of sourdough breads, which showcase the kitchen’s craftsmanship and patience. Each loaf is carefully made, offering a balance of depth, texture, and flavor. Whether enjoyed on its own, paired with their house offerings, or used as a base for their brunch plates, the sourdough anchors the experience: simple, honest, and deeply satisfying.
