The restaurant will stand at the Louis Vuitton Maison Seoul store in Cheongdam-dong, Gangnam-gu.

The Maison previously started its first pop-up restaurant with Chef Pierre Sang Boyer. Now, it continues its series of cultural and culinary projects with Passard.

Passard has gained attention for introducing vegetable-focused menus to fine dining. He highlights both seasonality and locality with “naturalistic dishes that satisfy the five senses.”

The Paris restaurant Arpège has received three Michelin stars under Passard’s direction.

“A new winter garden-style decor…for this restaurant where diners can enjoy dazzling “vegetable-based” cuisine prepared by a chef and gardener who loves the produce of the terroir. In fact, he grows his own in his three vegetable gardens specially set up for him in the west of France,” Michelin wrote of Arpège and Passard.

The said chef recalled how vegetables have reigned supreme at Arpège since 2001.

“[T]he seasons give the tempo to our cuisine. It is nature that has written the finest cookbook. We sublimate the 100-percent natural vegetables, fruit, and herbs from our three vegetable gardens in Fillé-sur-Sarthe, Le Bois-Giroult, and the Mont Saint Michel Bay,” Passard previously said.

Following Louis Vuitton and Passard’s partnership, clients will now be able to experience the chef’s specialty dishes in South Korea. This is while they stay within the glass space that architect Frank Gehry designed.
