Josh Boutwood, the only chef in the Philippines to receive two Michelin stars for his restaurant Helm, is giving diners in Hong Kong a chance to experience his acclaimed tasting menus through a special residency at Upper House. Across two of the hotel’s fine-dining venues, Salisterra and Chef’s Room, Boutwood will present two distinct dining experiences that highlight his signature precision, ingredient-led approach to cooking, and his philosophy of exploring heritage through flavor. Sand & Sea At Salisterra
Salisterra, the restaurant located on Level 49 of Upper House Hong Kong, is known for its modern take on Mediterranean cuisine—and its name says as much. Derived from the Latin words salis, meaning salt, and terra, meaning earth, it reflects a culinary philosophy shaped by both coast and countryside. Guided by House Culinary Advisor Chef Ricardo Chaneton, a Michelin-starred chef known for blending his Italian heritage with the rich coastal traditions of Italy, Spain, and France, the concept comes to life through fresh, seasonal ingredients that express a strong sense of place.

Boutwood will take over the kitchen on April 17, 2026, carrying that same philosophy forward through a thoughtfully composed menu. He’ll be opening his dinner with a Tuna, Coconut, and Lime Leaf course—a pairing of akami and otoro with coconut cream and kaffir lime leaf snow. It’ll be followed by Melon and 5J Ham, featuring cantaloupe, watermelon, and honeydew with clarified melon juice and cold-pressed olive oil.
The menu then turns to Patagonian toothfish served with roasted kombu cream and sea cucumber chicharron, before a main course of Roasted Lamb Loin with silken cauliflower, tahini, and fresh watercress. The experience will conclude with a finale of Chocolate, Whisky, and Toast, featuring caramelized white chocolate and toasted brioche. The Salisterra x Helm dinner will be priced at HK$1,188 per person.
Up Close At Chef’s Room
Chef’s Room at Upper House Hong Kong has long been known as a playful stage for global chef residencies, showcasing the diverse talents of visiting culinary voices, curated by Ricardo Chaneton. On April 18, 2026, Josh Boutwood will present a nine-course menu in this immersive, intimate space, which seats only ten guests.

The dinner is highly anticipated, offering diners the chance to experience Boutwood’s cooking not in a traditional restaurant setting but in a direct, unfiltered way. The studio format, centered around a chef’s counter where dishes are prepared in full view, brings guests straight into the action. Priced at HK$1,588 per person, the menu features several highlights, including Quail with Morel Mushroom and Mole, A5 wagyu with fermented root vegetable paste, and a refreshing Lychee Sorbet with blood orange diplomat.
