The Michelin-selected Bar-Asador Goxo takes its Basque cooking, Filipino ingredients, and signature dishes to Makati Shangri-La for one month.
The Goxo Makati Shangri-La pop-up has begun. From August 27 to September 27, 2026, the Michelin-selected Bar-Asador is taking over Sage Bar for a month-long residency as it prepares to open its new permanent home in Rockwell. The pop-up follows Goxo’s departure from its original Salcedo Village location at the end of May. The restaurant first opened there in January 2025 as an intimate 12-seat counter concept by Grupo Pintxos, with chef and partner Albert Mendoza leading the kitchen.
Its name translates to both “cozy” and “delicious,” fitting an experience where diners sat close to the kitchen and followed the progression of a prix-fixe menu. Mendoza previously described Goxo to Lifestyle Asia as the “playful little brother” of Bar Pintxos and Txoko Asador, its fellow concepts under Grupo Pintxos.

Fire sits at the center of Goxo’s cooking. The Bar-Asador combines Basque techniques and Spanish traditions with Filipino ingredients and wider global influences. The restaurant earned a place in the Michelin Guide Manila and Environs & Cebu 2026 as a Michelin Selected restaurant. The Guide highlights its charcoal-grilled prix-fixe menu, use of local and Spanish ingredients, and traditional dishes shaped by subtle innovation and “a Filipino soul.”
For the Makati Shangri-La residency, Goxo brings familiar flavors, several new details, and dishes that have become part of the restaurant’s story. These will be served within Sage Bar’s polished setting, where diners can settle in for long lunches or late dinners throughout the month.
